Changing iconic "IHOP" to "IHOB" after 60 years, is like "Apple" changing their name to "Orange" after 40+ years.
Or John Deere changing to Tom Deere or John Doe.
New Coke is a good analogy. We all remember how well that went.
My old high school football coach used to tell us, if you make 5-10 yards on a play, keep running the same play until you score. Why mess with success?
Some consultant is behind this name change and IHOP will regret taking their advice. Leave success alone.

Re-centerIng their market to the older set and simultaneously becoming more inclusive of the disabled, those of us who can no longer hop to IHOP can now hob to IHOb. Marketing geniuses.
