Youth and beauty are commodities that expire quickly, especially among women. Those hot women that wouldn't even look at you when you were young are suddenly much more available, perhaps even interested, twenty years later when the shoe is on the other foot (stable middle aged guy who is in good shape and healthy, with a good job, without a substance abuse problem).
The tables turn on a woman pretty quickly, and there is no turning them back. Most of them don't realize it until it's too late. I suspect this woman is in that camp.

I think that is basically right. Any attractive woman in her 20’s is a little bit like a celebrity. Strangers notice her, people approach her maybe too often, she can easily think that is what the world is like, full of infinite opportunities, and no need to commit to any one choice, there’s always another chance. Their environment prevents them realizing that it’s not like that for most people and is really just a fleeting window in time for her, too.

You want a wealthy, successful husband candidate? Twice divorced with three kids is not good on your resume darlin'. Lose about 40 pounds and 10-15 years and you might be acceptable? Since that is impossible, you might aim a little lower?

Its not just the physical and supple attraction of younger women
Thats a canard to me anyhow
Older women can have a lot of issues and be quite sour....note I said can.
Men want to be appreciated and loved and for their sexual partner to be nice to them
Younger women can be better at that because they are more likely to be hopeful about love

She’s not bad looking. I agree with Laz, I’d hit it.
Trouble is, her picture is perfectly fine, if I’m looking for a lawyer, a doctor or a financial advisor. Not so much if I’m looking for a wife and/or mother of my children. Also, the blouse she’s wearing is a tad tight around the middle.
