Good pastrami is a joy. But sometimes, what people do to pastrami makes me shudder.
No one in Chicago can make a decent pastrami, nor coleslaw or Deli mustard, for that matter. OTOH...their deli corned beef is good.
NYC still has THE best pastrami, bar none, of anywhere and having grown up eating that kind, has spoiled me for any other. ;^)
And as another poster said..."potato chips with pastrami?"! Also, who in their right mind puts a teensy amount of crappy looking pastrami on a hot dog bun? Sheeeeeeeeeeeeeesh!
