After reading about the sanitary conditions at the packing companies, staffed with thousand of illegal workers, we should sell China all the meat processed before these places were closed.

From what I’ve read and based on talking to some retired veterinarian meat inspectors, the process is sanitary, but the proximity and speed means human-to-human transmission is increased.

I’ve also read about the plants doing more to correct the proximity problem and the sanitary conditions in locker rooms and cafeterias, which really only affect workers, not product.

We don’t eat meat raw (although I roast and grill beef to ‘warm red’ whenever possible). Cook it and it’s fine. Marinades are another process that destroy bacteria and viruses. Back when this was not always true, people developed recipes for sauerbraten, corning of brisket and tongue,jerky, etc.

Humans are omnivores and have dealt with the problems of keeping meat safe for a very long time.
