A refreshing treat on a hot summer day. Add this to your MUST MAKE summer recipe file.
BTW, I noticed some farmer's markets are still selling watermelons.

ING 3 cups watermelon cubes frozen overnight 3/4 cup cream of coconut 2 tbsp lime juice

METHOD Blender smooth frozen watermelon, cream of coconut, lime juice (or processor).

Serve immediately, or transfer to ice cream container and freezer for later.
