Copper is really good for temperature control. In French cooking even being a couple degrees off can ruin a sauce.
Or retarded.
Never use copper pans. Horrible for your health. I forget exactly what poisonous substance they exude. Check Environmental Working Group. (EWG). They rank safety of cosmetics, local water supplies, veggies that need to be organic and those that don’t...
Ohhh.. Paella...
All Clad is less expensive and its pots and pans are still made in the US.
:-)
We’ve got a Mauviel mixing bowl and a paella pan. After moving to a new house that has an induction cooktop, it became worthless as a stovetop pan. My wife now essentially uses it as a kitchen decoration...a very expensive decoration.
We ended up buying a bunch of stuff from Tramontina, a Brazilian brand that has an on-line store. Reasonably priced and surprisingly excellent quality. They’re the best pts/pans I’ve used that didn’t have All-Clad on them.
