Why Caucasians Are More Likely To Be Celiac

Celiac disease is a serious autoimmune disease that occurs in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are undiagnosed and are at risk for long-term health complications.

When people with celiac disease eat gluten (a protein found in wheat, rye and barley), their body mounts an immune response that attacks the small intestine. These attacks lead to damage on the villi, small finger like projections that line the small intestine, that promote nutrient absorption. When the villi get damaged, nutrients cannot be absorbed properly into the body.

I was on a business trip to Countryside, IL (outside Chicago). My customer brought in pizza for lunch. Nice, but I'm gluten intolerant. I found a Thai restaurant just a block away and ordered green curry with chicken. I mentioned what brought me to the restaurant to my server. A couple guys at an adjoining table remarked that they eat there for the same reason. Irish heritage. Gluten intolerance/celiac is commonly found in the Irish. No surprise to me with Welsh/Irish/Scot ancestry.

My husband has Celiac disease. When he was first diagnosed life was rough and shopping was very expensive. Things have gotten better but here in America, a minute amount of gluten is still allowed to be called gluten-free. Certified gluten-free is truly free of gluten. Canada is much better as no gluten is allowed in their gluten-free foods.
