I sear my steaks in Wagyu tallow. Now THAT'S a good fat.
Beef tallow is an excellent fat. I bought fat from a local farmer from his grass fed/finished cows & rendered my own. Most of the time, I like to use ghee ... I make my own. To buy it is very expensive & I can make it for the cost of a pound of butter, plus I know there is nothing but butter in it.
