Per Wiki...
“Unlike bologna and salami, which are sausages, pimento loaf is baked like a meatloaf in a loaf pan.[5][6] Inexpensive pimento loaf is made with chicken and other ingredients common to inexpensive bologna. Also, less expensive pimento loaves are baked in sleeves instead of pans to give the cold cuts a round appearance, leading to the misconception that pimento loaf is related to bologna. Since pickles are typically less expensive than olives, pimento loaf is far more common as an inexpensive deli meat.”

Boars Head makes it. Depends on if your local market carries it or not.

One of my favorite sandwiches...grilled cheese and bologna.

Now I’m hungry...

Bologna is the slut of the salami universe.
Fried Bologna sandwich, I would eat a few bytes. I have a fat and junk food quota that I am not going to spend this way. How about scrapple and spam, which are Bologna’s competition. I have eaten scrapple and it was OK. It is pork trimmings plus half cornmeal.

We need a national scrapple day or month

Scrapple, also known by the Pennsylvania Dutch name Pannhaas (”pan tenderloin” in English),[1][2] is traditionally a mush of pork scraps and trimmings combined with cornmeal and wheat flour, often buckwheat flour, and spices. The mush is formed into a semi-solid congealed loaf, and slices of the scrapple are then pan-fried before serving. Scraps of meat left over from butchering, not used or sold elsewhere, were made into scrapple to avoid waste. Scrapple is best known as an American food of the southern Mid-Atlantic region (Delaware, Maryland, South Jersey, Pennsylvania, Virginia, and Washington, D.C.).

Bologna brings back happy childhood memories for me. When ever we traveled mom had a loaf of bread and a couple of pounds of Bologna. Sandwiches all around 😁

I think I got sick from bologna at an early age. As a boy, even the smell of the stuff would make me upchuck.

“wtf’s the deal with all the chefy interest in polenta?”

All I know, it’s been bubbling up from under, for years. I have not eaten any for a few years. If I had a proper grinder, I would grind up some popcorn I have n make some. I can do it with my blender but this wears out the blades. Hmmm.... I can do this with my green star juicer, then run it though my wheat grinder.
