Looks like they were going for yardage: get a coat on the cab, then move on to the frame, which was going to take much longer, then continue to roll after dark.

Brilliant idea, steal the most stand out color truck on the road and then try to rattle-can it right beside the Interstate.
If it had been white, it would blend in with about 50% of the others on the road.
