I once harvested a spring black bear that had been feeding on a winter-killed moose. The meat was so bad it went to the dump. OTOH, a black bear that had been eating spring beach grass was mighty tasty. I once treated a patient who had consumed undercooked grizzly meat that was infested with trichonosis. He almost died and he lost so much of his muscle mass that his career as a construction laborer was over.
