I’ve had so many horrible subs that were made with light airy bread- I jusy end up eating everything but the bread.

Some of our sub shops offer "Sub in a Tub"...no bread. Kinda like Burrito bowls...no tortilla.

We are too- i apparently have an alergy to ‘nightshades’ BUT i will suffer through it for a GREAT toasted Tomatoe sandwhich with mayo salt and plenty of fresh ground pepper- in Maine, that was always a staple growing up- Tomatoes ripened on the windowsill until perfectly ripe

Hoagies, stromboli... So many good sandwiches in this area. I only wish I still could eat whatever I like without gaining a pound.

I wish that I could eat whatever I like without the diabetic
blood sugar ramifications. It is an annoyance sometimes.

When I get tired of them, I go for a Stromboli -

I never, ever get tired of them. Nonetheless, sometimes I would go for a stromboli (or lasagna) anyway.

Yes. But a good eggplant parmagiana will do as well.
Or combine lasagna with eggplant parm - breaded & fried
eggplant slices in the lasagna - either vegetable lasagna or meat.
It works - it's good.

But I must use either whole wheat pasta, or else bean flour pasta
(chick pea or red lentil) - due to diabetic concerns.

Or just make a red lentil rotini Italian parm or lasagna casserole type of thing...
