Texas potato pancakes are made if there is any left over mashed potato’s (not instant).

Mix 1-2 eggs and mix in just enough flour to stiffen and shape into flat round cakes.

Pan fry.

“Texas pancakes?” We made those in Washington State in the 50s.

Same thing my mom and dad used to do, but added any leftover corn to the mix. Man, now I’m nostalgically hungry! lol

Yep. Leftover mashed potatoes. Shredded is for hashbrowns and mashed is for pancakes.

I use leftover, intentionally, mashed potatoes too. 1 1/2- 2 cups potatoes, 1 egg and 1/4 c flour. As empty nesters we ate lots of potato cakes. Now that I’ve learned to make mashed potatoes for 2, not so many.
