Even pan fried (I know, blasphemous!) is delicious. Had one last night. Rubbed it with garlic, salt, and pepper the day before, let it sit out for a few hours before cooking, and wow. Delicious. Some Swiss chard, a potato, and a glass of cheap red wine, and I was eating like a King.
