Here's to you Tiramisu
- 4 oz ground almonds
- 4 oz ground hazelnuts
- 1 cup double strength decaffeinated coffee, cooled
- 6 med. eggs, separated
- 8 T. sweetener (choose from any of the popular brands with the equivalence)
- 1 lb mascarpone
- 2 T. marsala wine
- 3 T. brandy
- 1 T. orange flower water (Substitute orange liqueur, if desired)
- 1/2 lb. bitter chocolate, grated or finely chopped.
1) Soak the nuts and 2 Tbs. sweetener in the coffee for a few hours.
2) Beat the egg yolks with the remaining sweetener until the yolks turn pale in color and the mixture gets very fluffy.
3) Add the mascarpone and liquid ingredients and stir gently.
4) Beat the egg whites until they are in stiff peaks. Fold them into the mascarpone mixture.
Take the serving dish and add a layer of half the nuts, then a layer of mascarpone mixture, finally a sprinkling of chocolate. Repeat.
Chill for at least an hour before serving.
Serves 12

Sign me up carlo. Since I do wedding cakes I may not use ALL your low carb recipes, but it will be good to have some tucked in my brain and available.
As an aside, I did a no carb birthday cake for my friend. It was made with ham and chicken salad, frosted with cream cheese, and the flowers were made from roasted red peppers, cheese, green peppers, carrots and black olives.
Everybody needs a birthday cake, diet or not!
