That has less to do with political correctness and more to do with common courtesy.
That may be however the fact that you really have to worry about it is all PC related. The fact is you can get into a lot of trouble for being discourteous.

Knowing a minority is in a bathroom stall and loudly telling a minority-related joke -- that's discourteous. Then again, he may laugh the loudest.
