I never make enchiladas, hard to believe I know. However, I can tell you how to make chilaquiles, which are extremely yummy and easy.
Simply layer either corn tortilla chips or stale corn tortillas with red enchilada sauce, chopped onion, grated cheese and shredded chicken. Bake until everything blends and cheese melts. Garnish with cilantro and enjoy.
