It's NOT "cheese"; It's curds...you know as in the nursery rhyme "curds & whey"; the whey being the licquidy stuff and curds are the lumps in Cottage Cheese. Then they pour gravy over all of that.
Personally, I find that dish disgusting, but each to his own,

The rest of New England is also beautiful and lobsters, believe it or not, are also caught off New Hampshire, R.I. and Ct.; heck, even shrimp are caught in Ct. waters!
