Sure you can. They hand you the food and you run rather than pay the bill.
I guess my local Chipotle is better managed because they NEVER hand you the food until you’ve paid. The whole architecture of their stores supports this.
If you tried to make a run for it you’d have to run a gauntlet of tables and probably a dozen customers just to get to the door.
