I know that the legal weed will have had taxes paid on it, but won’t that open up opportunities for those selling the illegal stuff?

On the contrary, every dollar spent in a legal store will be a dollar not given to criminals. (Of course, the lower the taxes the more such dollars there will be.)

Illinois has signs at its borders warning against bringing in untaxed cigarettes into the state. I can’t believe that the illegal sellers will just fold up their tents and disappear—especially if they can sell their untaxed weed at a lower price than the taxed weed.

Any info as to how things have worked out in Colorado and California?
