I had pan-fried skate wings tonight. Pretty good.
Sounds good. Looked it up and plenty of recipes, with a caper sauce sounds good. I have never once seen them on sale though.
Skates are not fish though, they are rays, and do not have scales.
Did it taste like scallops?
Growing up, w/ access to the ocean, people who couldn’t tell the difference thought that while “bay scallops”, the small kind, were really from shellfish, the larger “sea scallops” were actually made from the flesh of skate, shark, or some other “trash fish”.
