Taste is key. It’s got to taste good. Plenty of non-meat items taste good. Beyond Meat’s product might not be one of them. From the article:

[But privately held Impossible Foods said demand for its products grew tremendously last year.

“We’re not experiencing anything like what Beyond Meat has reported or some of the other brands in the space,” Keely Sulprizio, a spokesperson for Impossible Foods, said in an email. “Quite the opposite: We’re seeing hypergrowth, with over 60% year-over-year dollar sales growth in retail alone.”]

I’m impressed that anyone can sell a meat substitute at some multiple of meat prices. Ultimately, if it wants to get into the mass market, taste needs substantially improve, if prices stay the same. Alternatively, taste can remain the same, if prices drop below real meat.

“taste needs substantially improve”

So does the texture.
