You can, but in many (most?), states write-ins are tossed aside, never to be counted, or even looked at. They’re handled as spoiled.

Yes, of course you can. You can write in anyone’s name. That is what I will do here in New Hampshire in January if they try this crap here.
These nut jobs “rulings” are just to remove the name from the ballot so no one sees it. It does not prevent you from writing in Trump’s name.
