I can think of various ways altar boys can get into the wine. The most obvious there is still some out on a table after servicer waiting for a priest to lock it up. People get carless over time till the SHTF.

They were in the choir, they had a rehearsal immediately after Mass since it was near Christmas. Their robing room was located in a different area of the cathedral.
