I used to believe the universe was billions of years old 9big bang, etc) but the discovery of soft tissues in dinosaur fossils was the catalyst that led me to re-evaluate everything.

Then you have willingly discarded the opinion of the scientist who did this research and published those findings in favor of the explanation of a few crackpots who did nothing.
If dinosaurs lived a few thousand years ago then these fossils would not have to be de-mineralized, they would be bone, and we would find dinosaur bones in the same strata as lion and tiger bones; or at least lion and tiger fossils in the same strata as dinosaur fossils.

What did it for me was well recognizable dinosaur types in Amerind petroglyphs, e.g.
Amerind oral traditions describe Mishipishu (the "water panther" or stegosaur) as having a sawblade back, red fur, a catlike face, and a "great spiked tail" which he used as a weapon. Louis and Clarke noted that their Indian guides were in mortal terror at the sight of Mishipishu glyphs along the Mississippi river.
