Yes sadly the new business model is going to be to go out of business.

Theoretically all these restaurants and diners could stay in business if they increase their prices. But then you run into consumer resistance to higher prices.

The restaurant business as we know it could be fundamentally transformed. At a bare minimum restaurants and diners will need to have substantial outdoor seating and also have a drive-in window. Otherwise they just may not be able to make ends meet.
