LOL!!! (I heard on the news that there's a lawsuit pending in some state because of that type of situation. Only, in that case, the wife won the lottery and went out and bought a condo; left hubby at home in the shack and he's not happy about it.) ;)

Are you serious about the banana bread recipe? (One of the things on my to-do list today is to re-test a banana bread recipe I have. I did a reduced fat version and didn't take very good notes before, so now I have to confirm my steps. I like mine spicy, so I increased the amount of cinnamon, etc., too. Also, as if I wasn't already picky enough, I prefer to make mine with bananas that still have yellow peels; don't like it as well when made with super-ripe bananas.) ;)

This is a traditional, 100+ year old recipe. Chances are when great-great-+-granny made it, she used lard. This version calls for a neutral cooking oil. (I use extra-light olive oil, or a cold-pressed vegetable oil like canola oil. Spectrum Naturals www.spectrumnaturals.com makes a shortening that's free of hydrogenated oils; however, I've yet to test this recipe using their shortening. Note: Extra-light olive oil is different from extra virgin olive oil! I prefer cold-pressed oils because I can taste an "aftertaste" from the chemically extracted types usually found on the supermarket shelves.)
Okay, FINALLY, here's the traditional recipe:
BANANA BREAD
3 large eggs
1 cup of oil
2 cups of sugar
1 cup of small curd cottage cheese
1 cup of mashed bananas
3 cups of all purpose flour
1 tsp. of each : salt, soda, baking powder, and cinnamon
1 cup of black walnuts (optional)
Preheat oven to 350.
Beat eggs until thick. Add sugar, oil, cottage cheese, and mashed bananas. Mix well with spoon. Add dry ingredients. Stir until well mixed. This batter will yield 2 - 9x5 loaf pans. (I treat the pans with nonstick spray.)
Bake approximately 50 to 55 minutes. To check for doneness insert toothpick. If it comes out clean, then it's done.
Notes:
I use regular walnuts.
The quality of your baking pan will affect the baking time. (IOW, it'll take longer to bake the bread if you use disposable aluminum foil pans. The bread bakes faster and more evenly if you use professional-quality pans like those from KaiserBakeware or Chicago Metallic.)
I use more cinnamon and also add some "pumpkin pie-type" spices like ground cloves, etc.
I can post the reduced fat version later, if anyone is interested.
