They can demand proof of anything. I work with HR. Technically, it is illegal but rules are made to be broken by liberals. It’s why companies can say “You must be vaxxed to be hired” but mean “We will exceptions for some groups”.
Tell them you’re a Covid “survivor.”

I don't think that the question is appropriate for an interview and will likely not be asked. But if it is then answering "Not yet" is a good, generic answer and can't be taken to mean "Not under any circumstances.

Most? I agree that most probably won't require it. But lie and accept a job with one that does and I guarantee your time there will be short.
It is a violation, but this person should think about the type of environment they want to work in.
Quite simply you do not want to work for a company that would have you betray your conscience medically. If this, what may be next?
My advice, if they ask, simply say no and ask if they would FORCE you to take it. If they say yes simply end the interview right then and there. If nothing else this at least shows the company that their decision has consequences.

Tell them you will wear a mask. That’s pretty much “the” choice these days.
For example if you are applying for a job as a picker they can ask you if you can lift a certain amount but they may not ask you if you are diabetic. One relates to ability to do your job, the other does not.
What state are you in? You may have some other protections depending on your state law.

Just read that and understand how stupid that approach is. "If you're 60 years old and you've been working here for 30 years you don't have to be vaccinated, but if you are 20 years old and starting next week you do." So the person who is the higher risk for COVID doesn't have to be vaccinated, but the one who is the lower risk does? LOL.
I am an honest person by nature -- even more so in my professional work. And yet I would feel no moral or legal obligation to be truthful in a setting like that.

You're both right. This is the single biggest reason why any employer who has had staff working from home for the last 14 months will seriously consider operating this way indefinitely and never bring them back.
I am on the e-mail distribution list for a number of major law firms where business associates of mine work. I get their newsletters and PR materials regularly, and legal articles about COVID and employer/employee relations have been a hot topic for the last six months (and more). I can tell you from what I'm reading now that the legal profession has no clue how to advise their corporate clients about dealing with COVID. The advice they give is often incoherent and contradictory, and the only determination I can make is that anything an employer does is going to put the company in potential serious legal jeopardy.
Consider this just one more reason to move your operations to Mexico or China.
