Homemade Spam

When I was a kid, before going to school in the morning, I went to my local bodega for a sandwich: cream cheese with jelly; bacon, egg, and cheese; or Spam, egg, and cheese. That's right. If you grab a few cans of Spam off the shelf, some bodegas will cook them up. If you don’t believe me, go and ask next time! I also ate this in the house a lot as a kid, sometimes cold (only God can judge me). So it’s only right to pay respect on my end to this delicious, salty meat treat.

Somewhat of a buzzword nowadays, Spam’s surge in popularity is a beautiful thing. Those who shamed us for loving it are now singing its praises. Created in 1937, Spam has an interesting history here in America. It fed overseas soldiers in World War II and, around the same time, was advertised in magazines for all sorts of recipes, from a hot Velveeta sandwich to tomato-sauced spaghetti. During the 2008 recession, Spam sales increased by 10 percent. From kimchi fried rice to katsu musubi to even charcuterie boards in restaurants, Spam goes to show the power of nostalgia is forever undefeated.

This homemade version is my love letter. The ingredients for Spam are really simple if you look at the can: "pork with ham, salt, water, modified potato starch, sugar, sodium nitrite." Here, Morton Tender Quick (not the same as meat tenderizer) achieves that signature pink color and gives that distinct cured flavor.

Ingredients send grocery list

3 tablespoons cornstarch
3 tablespoons granulated sugar
2 tablespoons Morton Tender Quick
1 1/2 tablespoons kosher salt
1 teaspoon granulated garlic
1/2 cup ice-cold water
1 1/2 pounds pork belly, very cold, cut into 1-inch cubes
1 pound deli-style ham (like honey or hickory), very cold, cut into 1-inch cubes
1 1/2 pounds ground pork

When I was working in Korea years ago, the mom-and-pop sidewalk restaurants all sold spam-egg-cheese (sometimes also with ham and cucumber) sandwiches in the morning to students and commuters on the way to work. Especially outside the bases and big government offices. Having one became a ritual for me.

If most people knew what comprised their favorite ‘hams’ & other so-called ‘deli meats’ they might not ridicule Spam so heavily.

Fried Spam on white bread with mustard is a good sandwich. Broke up the monotony of fish and rice during my days working tuna boats.
One guy used to add strawberry jam instead of mustard which is pretty good also.

No argument there. I’ve only intentionally eaten it once so I knew what to expect (it’s a SHTF stockpile staple).

Though the other FReeper comment about breakfast sandwiches has made me curious to try since I find regular ham so unsatisfying on such a sandwich (I make breakfast sandwiches every weekend as a break from routine, usually on soft-toasted sourdough).

I think everybody secretly likes Spam. It barely advertises, but retains shelf space in every big and little store in the country, even in the quick aisle in conveniences.
