No, "they" didn't. And the Old Testament doesn't talk about a Hittite empire. What you are saying is simply not true, period.

It is a fact that until the ruins were discovered, the atheists declared the Bible was wrong, because it listed people who were Hittite, and the nation of the Hittites. They claimed such a place did not exist, so how could people from there exist, or the events mentioned exist. Thus they claimed the Bible is not suitable for using as history. They discounted the flood, the Red Sea crossing and the very idea that such people as Hittites ever existed, and thus the Bible was full of fictitious stories. Some even still claim that king David never existed.
Below is the times the word Hittite or Hittites is used in the Old Testament. The most famous is Uriah the Hittite who was married to Bathsheba whom David had an affair with and ultimately had Uriah killed to cover up his affair, Because he impregnated Bathsheba.

By the way, you are welcome for the history lesson, unless you now want to add to your ignorance, by standing by your claim that the Bible doesn’t talk about the Hittites.
Maybe you would like to double down and claim the Bible is a fictitious book, and whatever it has in it is made up, like so many atheists did for 1000s of years. Then when it was discovered to actually exist, they still claim the Bible is useless for historical purposes.
