Kyle, the Jewish character, is routinely blasted by Cartman.

As a matter of fact, in a recent episode, they had Kyle nearly killed by Cartman because they had converted Cartman into a "Ginger", but since Kyle has only read hair (ala Matt Stone, who is apparently Jewish with red hair) they called him a "daywalker"....

Well, first off, there's Cartman always going after Kyle for being a Jew. Or the Passion of the Christ episode, where he organizes the South Park citizens for the "final solution." There was the "Jew Scouts" episode... And of course, let's not forget about the "Concentration Camp of Tolerance."

Your point is a good one (that only Judaism is off-limits when it comes to parody). I've not seen a South Park that was in any way offensive to Judaism.
