I dunno. Seems like horses are different from cattle. Cows are way stupid, like meat lockers on hooves.
I'd eat Ole Flash if there was nothing else to eat, but I sure wouldn't support ranching horses for consumption. Just has en "ewww" value to it that I couldn't/wouldn't want to learn to shake.
To my knowledge, several medicines are developed from horse serums. People who eat horse meat may develop allergies from exposure to those medicines.
As I recall it wasn't too bad at all.We also could get organ meats,such as liver and kidneys pretty regularly, but they were not anywhere near the top of my preference list.
Seems like chicken was usually available,so we ate a lot of that too.
Horse meat is pretty good bar-b-qued, but I prefer wild donkey. Much more tender and more flavorful. I especially liked it in "Mexican Stew". That was back in the days before it became illegal to kill wild burros in Nevada.
Coon meat is great. Makes really good tacos, too. I just can't get beyond the "yuck" factor to eat it again. I hate coons, because they ate so many of my chickens. I figured it was justice when I ate one of THEM.

I agree with everything the author has written. I have eaten horse. It was good. And it is available in California. Many Asian grocery stores have it available. It's identity is labaled in the prominent Asian language - consumtion disclaimers are in English.
As an aside the German Army used horses a lot in WWII with the intent of eating them if they ran short of supplies.
Horse tacos sound reasonable. I draw the line at dogs.
