Different canning recipes requested

I live on a small farm in the northeast and practice the almost extinct art (around here anyhow) of canning my own vegetables. This year's harvest is tremendous and I am looking for some non-standard recipes for putting up the stock. Much appreciated.

Here's one for starters:

HOT PEPPERS IN GARLIC

Saute peppers (we use Hungarian wax...slightly hot) and garlic in hot oil until softened.
Pack into hot jars and cover with oil.
Process in hot water bath for 30 minutes.

Really good on sandwiches or a relish platter in the dead of winter.

I home can. What veggies and fruit do you have? Gotta go to work so will have to get back with you this evening. For the time being, go to your County Home Extension Office (found in the phone book under county offices) for tons of canning recipes. They will also test your canner/presser cooker for safety.
