Recipes Needed (Vanity)

I have grown tired of cooking (and eating) the same meals over & over again. Mostly we eat steak, beef ribs, fried chicken, fried pork chops, tacos, and enchiladas. With the occasional corned beef, spaghetti and (packaged) Chinese food thrown in.

I have several cookbooks upstairs that I was considering perusing, then I thought about the fine folks on FR.

Please add your favorite recipe(s) to this thread so I can start experimenting. The only thing that I will not cook is liver & onions (YUK). I would love to have a tried & true recipe of pot roast and (not-packaged) Chinese food ~ these two things, along with homemade biscuits, have forever rejected me.

I don’t have an aversion to baked stuff ~ it just has not been in my repertoire.

Also keep in mind, we do not have immediate access to fresh seafood.

And how do you cook these dogs?

Broiled or grilled.

NEVER fried.

Fried dog is low class, per Kim Jong Il.

Just because it’s in a cook book doesn’t mean it’s any good...She asked for “tried and true” recipes.

Well, you are realy missing something with properly cooked liver and onions. Someday I’ll cook my version of them for you to try. Off topic but still without power, had grilled burgers for supper,bbq brisket yesterday. This cooking out on the back porch is starting to get old. Oh well, maybe by mid next week we can go to sleep without the noise of the generator in the background.

uhm, duh - - - this is why I posted this vanity thread. I could give a crap about what people think of what I have been cooking. What I have been cooking has been great for over 20 years . . . I just am ready for something different. Don’t care for “different advise”, I care for recipes.

EASY BEEF RISSOLES

1 pound beef mince
1 large onion
1 squash (also called zucchini - a long green vegetable)
1 egg
1 lemon
1 teaspoon of curry powder

Grate the onion and squash. Sprinkle with salt, curry powder and lemon juice. Beat egg and add. Blend in beef mince, kneading with hands until all mixed. Shape into small rissoles. Fry on in pan with a little oil.

Serve with green salad to accompany.

LEMON AND GARLIC CHICKEN

1 chicken
2 lemons
Many cloves of garlic

Take one large free-range chicken. Skin, and cut into 4 or 8 pieces. Juice lemons. Grind garlic and salt with a pestle and mortar until it makes a paste. Add lemon juice. Pour the lemon and garlic marinade over the chicken, leave 6 or 12 hours.

Remove from marinade, but leave some lemon and garlic on. Place chicken pieces in a greased baking dish, and put in medium hot oven for two hours or so - until well cooked.

Serve with green salad.

i love to go on line find thousands of recipes! The ones I like the best are Amish ones, they remind me of my grandma’s cooking.

It sounds like your tastebuds need a change of pace. Here's something easy. Get a box of this at the store. Here's the recipe we use:

1 pkg Golden Curry made by S&B (found in the oriental section of many large grocery stores)
½ onion
1 zucchini sm.
1 bell pepper or more
2-3 med. potatoes
1-1 ½ lbs chicken
2 carrots (lg.)
2 stalks of celery (lg.)

Pour 2-4 T. oil into a pan, heat, add chopped or sliced onion, fry for aproximately 5 min. add cubed chicken, brown.
Add the remaining ingredients (cut all veggies into bite size pieces) simmer until all the veggies are tender, add water as it cooks if necessary.
Serve over rice.

I'm going to recommend Filipino food: chicken afritada, beef kaldereta, pork adobo, and sinigang. (I strongly recommend substituting salmon from Alaska or northwest Canada in lieu of the pork in the sinigang.) Paxciw (use fresh fish or frozen fillets from the grocery store) is also good too. Also, leche flan and cassava cake, when made properly, are to die for.

Seriously, this stuff is good. Just make sure you serve with steamed jasmine rice (not the American stuff). You may need a rice steamer. Oh, and you can try steaming slices of sweet potato on the rice. It's delicious too.

Now that my fellow Freepers have made me think of food, and especially since I haven't had dinner tonight, and I'm remembering my mom's tasty cooking (sigh).

My hubby’s recipe...it’s really good with a sandwich:

Roasted Garlic and Leek Soup

1 large leek, whites only, washed and chopped (reserve a few slices of green)
½ small sweet onion chopped
3-4 cloves roasted garlic
2 medium russet potatoes, peeled and chopped
2 Tbsp. olive oil
2 14 oz. cans chicken broth
½ pint heavy whipping cream
15-20 peppercorns

Combine leek, onion, garlic, and potatoes in large saucepan with olive oil. Saute
over medium low heat until onion and leek become translucent. Add chicken
broth and steeping ball with peppercorns and some of the leek greens.

Bring to boil; reduce heat and simmer for 20 minutes; making certain that potatoes
are cooked through. Remove steeping ball, and working in small batches blend vegetable and broth mixture in food processor until smooth.
Return to low heat; finish with cream. Garnish with chives.

Oh yeah, you can also buy Mama Sita mixes at Asian or oriental grocery stores to help speed things up.

Do you prefer to cook in the evenings, or are you open to slowcooker recipes? I use mine constantly...
