I’m sorry, 6 to 8 months for mustard (still a short time in my opinion), ketchup is 1 month unrefrigerated, longer in the fridge (I’ve had mine for quite a while, tastes fine).

Opened: 1 year in the fridge. For best results, store your jam and jelly in the fridge, even before opening.
Open or unopened, it makes no difference?

If it smells ok, if it’s not weepy or moldy or strange looking I assume it’s ok. I’m still alive. So is my family. On the other hand, most things that don’t get put in the fridge overnight get tossed out. Not sure why, but for some reason, overnight seems dodgy to me.
