I wonder what would happen if you rolled up the cheese inside the burger and then wrapped it in the bacon?

All the cheese would go bye bye. He cooked those over some medium low indirect heat. Didn’t even flip them. That is one patient grill man.

The cheese? I’ll bet it’ll melt away. Because of the length of time to cook the burger at a heat low enough not to burn the bacon.

We used to split hot dogs and pack them with cheddar wedges, then wrap with bacon. They’d get cooked over fairly high heat to mainly cook the bacon. Still lost a good amount of cheese, but enough stayed.

You could try crumbling an aged sharp cheddar in the meat before rolling it.
Blue Cheese would be good there too.

I’m going to stuff one of those burger logs with swiss cheese and diced mushrooms and then I’m gonna refrigerate it overnight prior to grilling. This should help keep the cheese in place. I’ll do the bacon separately and wrap it around the “dog” after it has grilled completely. It’s so crazy, it just might work. How bout this for an idea: egg wash the whole thing and roll it in seasoned bread crumbs and then deep fry it like a scotch egg?

You could wrap pastrami instead of bacon.
Or half cook the bacon in a pan before wrapping it around the dog.

Deep frying would certainly make things interesting.

Go full Philly, add some diced bell peppers. As for deep frying, make a chicken fried steak batter and dip before frying!
