Hearty Vegetable Soup Perfect for Cold Weather

It’s that time of year when colds reign supreme, and homemade hot soup is priceless.

The medical profession admits homemade chicken soup helps those who are sick with colds or the flu recover a bit faster. One of my pet peeves about chicken noodle soup is that it doesn’t have much staying power. I prefer adding some beans instead.

A recipe from my home area in South Dakota. This is a no recipe recipe..good cooks will know how to make this

Russian Green Bean Soup

Cover a meaty ham bone with water in a soup pot. Bring to a boil. Reduce to simmer and add a large onion (diced) a couple of potatoes (peeled and dice) and some green beans either fresh or frozen. This soup is ideal with late season green beans that are not very tender. Use the cheapest generic frozen green beans. Season with salt, pepper, a couple of bay leaves and lots of savory. Cut the meat from the ham bone and add to the soup. A dash of liquid smoke is good too. When serving stir in a good tablespoon of sour cream in the bowl.

Wow, your recipe sounds awesome! And I love how I can use cheap generic frozen green beans...I’ve got some in my freezer right now. Can’t wait to make your soup!

I like soup. Mmmmmmmm........

One box of Uncle Ben's Long Grain and Wild Rice cooked per box instructions,

One can of Campbell's Cream of Chicken soup with one can of water mixed into the rice and heated.

Quick and absolutely delicious.

Serves four.

My grandmother used to make something called pepper pot soup. It was awesome.

I find beef vegetable to be the family's favorite.

Pepper Pot Soup is great, if you can get over the fact that it’s meat is beef tripe.

A few tips when making homemade chicken noodle soup. I always add two cups of V8 tomato juice (or other store brand) & the powdered chicken stock you can find in a jar at local grocery stores. It's more like a paste, use about 3 heaping tbs. to a big pot of soup.

Oh, and cabbage, cut up about a 1/4th head of cabbage and add to the soup. The second day all these flavors blend & oh my, my grandkids love it!

And of course, your celery, carrots & onions.

My mom was a fabulous cook, but never had a recipe for anything, I've spent years trying to duplicate the flavors & feel I am about 100% with the chicken soup, FINALLY!!

My grandmother made use of everything when she'd have a steer butchered. Tounge, kidney stew, heart, brain, stomach, etc... I learned to make real pork scrapple from her. It's really easy to make, keeps well, and is a family favorite.

She raised her kids in the depression era. She was not a poor woman, but culture from that period taught them to appreciate everything. Snack when the kids got home from school was fresh baked bread with lard and sugar on it. Lard went into everything if I remember correctly. None of her children had heart or cholesterol problems either.

This sounds like my father’s recipe for lentil soup. I loved it when I was a kid and my own kids adored it too.

Again it starts with a big ham bone with a lot of meat left on it, to which one adds chicken broth, bacon pieces, sauteed onion, sliced carrots, celery, potatoes, a couple of bay leaves, and lentils soaked overnight. Throw ‘em all together and simmer for four hours. Make enough for freezing. Great with cornbread and some greens.

But with any of these recipes, remember the most important ingredient: don’t forget the Beano!

I’m dying to make a pot of split pea soup a la my mom’s, but don’t know where to get a ham bone with meat still on it. Do you make a deal with a butcher or what?

My Mom got me an electric pressure cooker. Nothing compares to broth made in the pressure cooker. Before I could never get enough flavor no matter how much I simmered.

Get a small picnic bone-in ham. Cut off most of the meat and freeze it in small portions to take out later for ham salad, ham % eggs, scalloped potatoes & ham, etc.

Use the bone that’s left with a lot of ham on it for the soup.

That’s the only way I’ve found to do it.

You can use a ham hock for flavor but there isn’t a lot of meat on it.

Sounds reasonable; I remember Mom used smoked pork hocks when she absolutely had to, but didn’t really care for the flavor. Will give it a try, thanks.

My doctor told me that soup (homemade) is not only very nutritious but a wonderful diet aid. He said that the liquid helps fill you and if it is hot... it takes more than 20 minutes to eat so you fill up. It really is very easy to make. My personal favorites: beef vegetable, chicken and rice, and split pea.
