i use the jarred Barillo stuff. i have made it from scratch before but the kids prefer the jarred. Another thing i want to make soon, bc xsjr and i both love zucchini.

I’ve made it from scratch, too, but I like the taste and convenience of the Knorr packages that you mix with milk and butter/margerine.

I hadn’t decided on a veggie for dinner, but you reminded me that I have a couple of fresh zucchinis-I’ll slice one of them and a small onion, and saute them in butter with lemon pepper and fresh basil-that goes very well with fish.

I like to slice up my zucchini, spray with pam, arrange the zucchini on it spray again and top with Parmesan cheese....then bake. Yummy and almost no calories.

Oops-I should have posted this to you-

Thanks for the zucchini recipe-this one is the one I use most for fish, because it is fast and easy but I can’t post a link because it is out of one of my recipe books-

1 lb. fresh fish fillets, washed in cold water
1/2 cup of dry white wine
3 tblsp butter or margerine
juice of 1 lg. lemon
1 tblsp minced garlic (I use 2)
1/4 tsp fresh ground black pepper (I use more)

Combine all ingredients in a glass baking dish, cover and bake in 375 oven until done, or cover with plastic wrap and bake on 60% power in microwave until tender.
