I started my working life right out of high school working third shift in a food processing factory (cannery). The prepared product is measured into cans by volume, a jet of steam displaces air in the can just as a lid is dropped in place and sealed by a mechanism which “rolls” the seam and seals the can. The can then enters a steam chest through a rotary “air lock” that keeps steam from escaping. The inside of the steam chamber is made up of conveyors which allow the can to spend 20 minutes while moving continuously toward the exit lock. After processing in the steam chamber the cans are labeled, boxed and moved to the shipping floor.

The cans are in motion from beginning (empty) to end (filled, cooked, & labeled) at a rate of about 300 cans a minute. The product is cooked in the sealed can. The steam chest heats the sealed can filled with product. Before the continuous process was developed cans were packed in large round baskets and lowered into large retorts (pressure cookers) to cook for 20 minutes. The retort loading and unloading slowed down the processing cycle and fell out of use when the continuous process was developed.

I would guess the unfortunate victim was probably a millwright working on the conveyor system inside the steam chest when someone closed the hatch and started the machine. Under ordinary conditions the machinery (and the whole plant) operates 24/7 until the raw material is all processed. It is a very noisy operation, with can clattering along on the various conveyors and the inlet and exit steam locks banging away like demented gatling guns.
