(I usually do these with leftover chicken breast and make a tex/mex meal out of it. But this year I used thanksgiving leftovers — diced turkey, dry dressing, and Swiss cheese).
2 to 3 cups of diced meat - chicken, turkey, beef, pork
Filler such as pico de gallo, dressing, chopped onions, celantro (use your imagination)
Two cans of home style Grand biscuits
Preheat oven according to directions for biscuits.
Roll out biscuits to 1/4 inch thickness.
On one half of each biscuit, place a couple of spoonfuls of meat mixed with filler, leaving half in edge. Cover with cheese.
Fold in half into a half moon shape. Crimp edges with a fork.
Bake on ungreased cookie sheet until golden brown.
Eat with gravy, queso, or salsa.
Have y’all seen the price of chicken wings? Considering the actual meat per pound, I can’t afford them. So, when I have a whole chicken, I cut off the wings and put them in a freezer bag before cooking the chicken. Eventually, there are enough to make a batch of hot wings.
Bang Bang Shrimp
3 Tbs. sweet Chili Sauce
1 TBS Sriracchi (sp)
Coat shrimp with the corn startch. Fry in oil. Make sauce and put together. This is a copycat recipe. The restaurant serves it on a lettuce mixture.
I have this in the crock pot right now. It’s starting to smell great in here, two hours after starting it. I found this recipe on Pinterest and have been wanting to try it.
Crock Pot Cube Steak
1 family pack cube steaks (I’m using 6, a couple are small)
1 envelope Lipton onion soup mix
2 cans cream of mushroom soup
3/4 C water
Mix the soup and water and then add the cube steaks.
Cook on low 8 hrs.
I’m serving it with mashed potatoes and a veggie.
My Granny made this, yet I’ve not heard of anyone else else.
The flavors of the vegtables combined to make it tasty.

Found this chicken recipe in a “woman’s” mag. Everyone loves it.
Mrs. Potter’s Chicken
1 1/2 cups Ritz-type crackers, crushed
3/4 cup grated parmesian cheese
1/4 tsp black pepper
1 1/2 lb. chicken breast tenders, pounded to 1/4 inch
thick (or 4 chicken breast, sliced in half
horizontally and pounded to 1/4 inch thick)
2 tbs or so melted butter or margarine
Heat oven to 425 degrees. Lighty coat a cookie sheet with oil or spray. Combine crackers, cheese and pepper in bowl, beside another bowl of melted butter. Drag chicken through butter, then coat with cracker mixture. Arrange on pan in single layer. Bake 12 minutes or until cooked through. So quick to make, and so good to eat.
Remember that chicken recipe from the ‘70s that used onion soup mix?
Onion Soup Mix Chicken and Mashed Potates
Stir one envelope of Lipton onion soup mix into one thawed small container of orange juice concentrate. Lay
Lay chicken pieces in a baking pan. Pour the soup mixture over the pieces. Bake until done.
Pour off excess cooked juice and drippings to use as gravy for mashed potates. Thicken if needed.
There was a very good chicken recipe that involved Italian salad dressing....
Geez, can’t spell potatOes today. Or maybe between the cat laying on my hands and the keyboard gunked up...
You marinate chicken breasts in Italian dressing overnight or for several hours. Then grill.
