I used to work with an outspoken (read: loudmouth) vegan.

One of her favorite things to do when she'd go to McDonald's with us was to order large fries and pontificate about how bad the other food was for us (and the planet).

I let this go on for quite a while, always making a point to bring up her french fries in conversation, and how much better than us she really was.

One day I called her out, and showed her the 'ingredients list' for McDonald's french fries: cooked in beef tallow. She practically vomited on the spot.

A few years ago I heard she was living in SF and had given up the vegan life.

Well, Alexandra’s a little slow on the uptake.

It only took me eight years and gaining 40 pounds to realize that vegetarianism and veganism are not healthful for everyone, certainly not for me.

Mmmm... Bacon! We’re having bacon cheeseburgers for dinner tonight. Mmmm... Bacon!

I learned how to make it when our daughter and I went to Japan in 2005. The friend we visited arranged for us to have a cooking class led by a well known author of Japanese cookbooks, at the author's apartment in Tokyo.

When we came back home, I was talking about it with one of our sons' friends, Toshi, who is Japanese, and he laughed and said that Hijiki was one of his 'comfort foods', and that one of his Grandmothers always made it for him, when they went to visit her.

In five minutes I shall begin the grilling of two tenderloins wrapped in bacon. What I don’t want to force tonight will be a sandwich tomorrow. On a hamburger bun. With sesame seeds. That’s vegan, isn’t it?

Cows and pigs eat lots of vegetables and perform the service of combining them with their own deliciousness and concentrating the protein into a more palatable form.

Think of them as “middle men” a great tradition in American Capitalism.

So eating them is not only good tasting, it’s efficient and patriotic!

(Sesame seeds are a nice touch. Even better to use pressed sesame oil, mirin vinegar, wasabi, sugar and soy to make a great sauce!)
