Potato Salad May Help the Immune System

Science Daily — It has long been known that eating potatoes is good for bowel health, but new research suggests that they may also have a beneficial effect on the whole immune system. Especially if eaten cold or in a potato salad, Anne Pichon reports in Chemistry & Industry.

Spanish researchers found that growing pigs fed large quantities of raw potato starch (RPS) had a healthier bowel. Not a surprise, but they also found that RPS pigs had decreased levels of white blood cells, such as leucocytes and lymphocytes in their blood. White blood cells are produced as a result of inflammation or disease, generally when the body is challenged.

The general down-regulation of leucocytes observed by the Spanish researchers suggests an overall beneficial effect, a generally more healthy body, according to immunology expert Lena Ohman at the Department of Internal Medicine, Göteborg University, Sweden. A reduction in leucocyte levels of about 15% was observed in the RPS pigs. Lower lymphocyte levels are also indicative of reduced levels of inflammation, but according to Ohman, the observed reduction in both lymphocyte density and lymphocyte apoptosis by the Spanish researchers is surprising.

Pigs were fed RPS over 14 weeks in what is the longest study of it kind on the effect of starch on bowel health (Journal of the Science of Food and Agriculture doi:10.1002/jsfa.2835). Study leader José Francisco Pérez at the Universitat Autònoma de Barcelona, Spain, said: 'The use of raw potato starch in this experiment is designed to simulate the effects of a diet high in resistant starch' says Pérez.

Humans do not eat raw potatoes, but they do eat a lot of foods that contain resistant starch, such as cold boiled potatoes, legumes, grains, green bananas, pasta and cereals About 10% of the starch eaten by human is resistant starch - starch that is not digested in the small intestine and so is shunted into the large intestine where it ferments.

Starch consumption is thought to reduce the risk of large bowel cancer and may also have an effect on irritable bowel syndrome (IBS). Ohman's team previously found that the overall lymphocyte levels do not vary for IBS patients, but that lymphocytes are transferred from the peripheral blood to the gut, which support the hypothesis of IBS being at least partially an inflammatory disorder. She says the decrease in lymphocytes observed by the Spanish is therefore interesting, and a diet of resistant starch may be worth trying in IBS patients.

I made a batch for a group picnic on Saturday and it was a hit there. Give it a try sometime. Really good for colons (I have diverticulitis, so my gastro thinks it’s great)

You're kidding. I can't recall a Thanksgiving or Christmas where we haven't had, among many other savory pies, Pecan.

That is interesting that your potato salad recipe in NW PA is exactly the same as mine in Texas. I would have expected yours not to have the mustard in it.

Basically, I make our potato salad the same way. I used to cut up the little sweet gherkins, but one day I was out of them, so I used sweet pickle relish instead. That's good too.

And my special trick is to mix a little Salad Dressing into the Hellman's Mayo. It gives it a good taste.

Sometimes, if I think of it, I'll add a teas of sugar.

Great tips! What kind of potatoes do you recommend? I use Russets, but lots of recipes call for red or others, peeled and unpeeled, depending on the recipe. Thanks again for the info, I would only add some Krazy Salt and Pepper, and sometimes I use dry mustard mixed with a little vinegar instead of prepared mustard along with the mayo.

Actually, my neighbor shared a quick and easy red potato salad that my family absolutely loves. Boil the little red potatoes and cut into pieces. (I leave the skins on) Add chopped green onions and bacon and Hidden Valley ranch salad dressing. A little salt and pepper - yum!

1 c. frozen peas & carrots
2 scallions, chopped
2 T. fresh parsley, chopped
1/2 c. mayonnaise
1/4 c. Henri’s Dressing
3 T. Dijon mustard

I’ll cut you slack because you are from PA, but down south a gherkin is a sweet pickle. I think it should be a hanging offense to put sweet pickles and Miracle Whip in potato salad (or in deviled eggs!)

Here are my adjustments for southern potato salad.

If you boil the potatoes whole in the jackets they get tender without falling apart. Put the potatoes in the fridge until they are just cool enough to handle then peel off the peels and dice the potatoes in large chunks because they will break down when you stir them.

Always mix the salt, pepper, onions and celery(or onion powder and celery salt/seed if you have picky eaters) in when the potatoes are still warm because the flavors meld better. Use dill pickles, real mayo and yellow mustard. There should be enough mustard to make the salad light yellow. Put a jar of chopped red pimentoes in and stir the chopped eggs in last so that you get bites of egg white and yolk throughout the salad. Sprinkle the top of the finished bowl of salad with paprika.

Now, I must make some because my mouth is watering just thinking about it.

Lactose intolerant? who cares, the bacteria in KEFIR predigest it for you, no problem.

For years I avoided milk like the plague. I was lactose intolerant in a big way. I discovered by accident that I'm allergic to wheat. That was almost enough knowledge. The whole picture is gluten intolerance. I changed my diet to a gluten free diet and now I can enjoy milk again.

What I learned was that the tips of the villi in the intestine is where lactase is manufactured. If you are gluten intolerate, the first part of the villi that get damaged is the tips. The consequence is that lactose intolerance can be an indicator of gluten intolerance. The damage done by gluten can progress to symptoms of IBS and full blown celiac disease. The good news is that a gluten free diet will allow the damage to heal. Hooray! The iced cafe latte is on my OK list again!

My parents wasted piles of money taking me to an ear, nose and throat doctor to try to "fix" my sinus problem. A gluten free diet "fixed" my sinuses. No more post nasal drip and chronically stuffy sinuses. No more flatulence and diarrhea after consuming milk products.

Maintaining a gluten free diet requires vigilance, but the positive health results are worth the effort.

Well, see, in our household at least, Thanksgiving and Christmas are reserved for Pumpkin pie.

I've been on vacation the last few weeks and I just came back from a road trip pilgrimage to EWTN and the Shrine of the Most Blessed Sacrament.http://www.olamshrine.com/

While in Irondale, AL I had lunch at the original Whistlestop Café.(Tried the Fried Green Tomatoes - pretty good, tastes just like onion rings) Anyway they had Pecan pie in the dessert line, which I passed up in favor of a slice of Chocolate Cream pie(!)
