This is in fact Byzantine cooking, perhaps brought to perfection in pre 1975 Lebanon.

There’s a Palestinian family with an order-at-the-counter restaturant in my town, excellent Hummas, Shwarma, and Falafel.

I’ve had the pleasure of dining on palestinian cuisine and was beguiled by the freshness and complexity of both the vegetables and herbs. Further, I was delighted at the subtle seasoning of the fowl and the attention to detail in it’s cooking.
Unfortunately in the end, the unquenchable hatred overpowered every other characteristic.

That's prompted an online protest called "Hummus not Chummos," a dig at the inability of some Israelis of European origin to pronounce the guttural "h" in hummus. Do they have to protest EVERYTHING?
To: SJackson
Oh, cool... I’ve been looking for a good recipe for Blood Soup. ;-)

a dig at the inability of some Israelis of European origin to pronounce the guttural "h" in hummus. German and Russian, not to mention Hebrew, all have a guttural "ch" sound.

Palestinian cooking—LOW PROFILE, HIGH FLAVOR...
my first choice....guarenteed to cause gas & blowback!!!
To: SJackson
I’d love to learn about the cuisine. Food is good. Its the blowing up folks that I tend to not like about them.
This line caught me : “more than 80 percent of Gazans and almost 50 percent of West Bankers live on less than $2 a day”
I think I’ve figured out how to cut the welfare budget. Build the projects in Gaza.

I hope my ancestors forgive me...but you are 100% right. The Palestinian and Syrian variants are equally world class.

I, for one, am not interested in celebrating ONE ASPECT of the Palestinian/ Arab culture. Don’t care that they invented Algebra. Don’t care that they cook in an interesting way. Do not care that they wrap their heads in rags, nor why. Do not care that Mighty Mo’ et al. married girls, nor what their excuse was. Don’t care that our numbers originally come from theirs. I DO NOT CARE about these cultures.
Why do I sense these cultures, almost every day, in one way or another, are being JAMMED down my throat?? Call me paranoid, but I call it ‘wary.’

Well, ya gotta admit that Jewish cuisine is not famous. Too bad that two ethnic groups in one region share the inability to cook. BTW, I’m a Cajun from Louisiana and I cook every day. So if you all want to sell me on Jewish cuisine beyond chicken soup I’m open to ideas.

Hummus? NEver again. We spent a few days in Jordan, ate enough Mezza that I will NEVER AGAIN eat any of those things. They lost their charm almost immediately. And they were the highlight of the cuisine (altho we didn’t get the sheep’s anus stew, which my friend who’d worked in Saudi Arabia warned us about — ‘It’s small but you can taste it throughout the stew.’)
