Don't kid yourselves, the New York City authorities would deny it a change of zoning. A restaurant, without the processing aspect, might slip by, but I doubt it.

Now maybe a "Church" where Bacon is used instead of or in addition to bread and wine for the communion/sacrament.. that might work. :)
