There is no season. It’s open season.
I have only had it in sausage, with cheese and jalepeno and it is fine.
I have never had the meat cooked straight.
Its my understanding that gaminess is dependent on what they are foraging.
If the are eating post oak acorns they will be gamey.
If they are eating corn and peaches they wont.
It is my belief that there must be a way to cure even the gamey ones in a way that will produce a good ham.

Looks like it weighs a ton.
But it really doesn’t. 850 gr = 30 ozs.
That’s for the 4” barrel.
The 2” barrel is 700 gr = 24.7 ozs.

Its difficult to fail.Yes. Most trainers grade to the curve of the crowd, but they do have minimum performance standards and somebody always seems to fail. But the trainers give those folks extra help.
