Love your ‘man’s guide to cooking a turkey’ LOL
As the eldest of seven, I had to help Mom in the kitchen from an early age. By the time I was a young bachelor on my own, there wasn’t a whole lot I didn’t know about culinary basics.
Even still, I usually wound up at Mom & Dad’s for Thanksgiving for years and years, and never attempted to pull off cooking such a major meal by myself.
The first and only time I tried it, I was in my mid thirties, and I’ve gotta say, I’m still proud to this day about how that meal came out. I was even prouder, because I didn’t call Mom a single time to ask her how to do something ;-)
We’re cooking Cornish Game Hens this year.
I will be marinating my turkey in jerk seasoning and then smoking it early in the morning for about 4-6 hours. I will use the left over seasoning to flavor the stuffing, which will be baked in the oven.

I was sick as a dog one Thanksgiving. Lil’ Miss had given me pneumonia not once but twice. I couldn’t get out of bed but managed to give 12 year old Lil’ Miss about three dinner instructions. She did the whole thing herself and I couldn’t have done any better.
I did the grocery shopping this afternoon and with a 21 lb turkey and all the sides, the grocery bill (including a guess at $5 for seasonings and other on hand pantry stuff) is just shy of $35. The turkey was $21 but nothing else was on sale. Ha, yahoo.com with their skimpy one pie divided up for 10 guests and awful menu came in at $100.

We do two turkeys —
The big one in the oven, brined, stuffed and slow roasted.
And the second, smaller bird — in the smoker!
At the end of the day, there is NEVER any leftover smoked turkey. Gone!
