The Post Office now takes a photo of every piece of mail in the system, and tracks it to its point of origin (mailbox or post office). They started working on this when the Unabomber was on the loose and really ramped it up after 9-11.
Pretty quickly they at least know the mailbox the letter was dropped into. From there it becomes a local shoe leather investigation.

You’re overstating how early a piece of mail gets tracked. No one is recording the mail as it gets picked up on routes or collection runs. The carriers and clerks are just piling it all together to be sent out to a processing plant.
The mail gets photographed as it runs through the letter sorting machinery that prints the barcodes on it. That’s also where the sniffers are located that look for explosives, poisons, biologicals. That should be the first point that you could firmly establish for a piece of mail. Parcels would be easier to track, a lot of those have to be brought to a counter to be accepted in the mailstream.
