I wrote an email to the people at adoptasoldier.org. Here is a copy of the e-mail I sent them, and their response.
Dear Jon,
Thank you for your willingness to support a member of our Military.
Address your first letter to "Any Service Member", then once you receive
a reply; address anything to that specific person from that point on.
Enjoy your correspondence. Let them know that you are praying for them,
and quote them Psalms 56:3. (If you don't know this scripture, I'll
tell you what I tell my children...look it up!).
