My crazy cousin texted me today, she is the same one who criticized police officers and Republicans during Thanksgiving. She texted me today, saying that police are not trustworthy with minorities and women. She is upset because her brother wants to be a police officer. What would you tell her if you were related to her?

Get over it and support your family.

She says it would break her heart if he wore the uniform. I agree that there needs to be policing reform but she says that him being a police officer is non-negotiable. She fears that police officers rape women.
Tell her yes there are some bad cops. But not vey many in reality. By and large, first responders are well respected in society.
The Golden Rule:
Treat others the way YOU want to be treated.
It doesn’t always work, but it usually does.
When you show someone respect and consideration, PLUS keep yourself calm, that can go a long way to de-escalate most situations.

Nothing, and I would immediately block her number - life is way too short to deal with people like this.

She is allowing for fear and paranoia to be the guiding forces in her life. Most folks try to stay away from such negative trouble-magnets whenever possible.
Sometimes you attract what you put out.
It can start over nothing.
A simple look can provoke this sort of response:

We have all met people like that. The best thing is not to react at all or even give eye contact. This is somebody with
