Almond flour is great for low-carb baking. Haven’t tried making a pit crust, but you probably could.

Might be better than other pies like apple and cherry.

What is nice is that you don’t have to worry about fat. I loaded my pie with a plateful of whipped cream.

Yup. Almonds work well.

We have been low carb for two and a half years. I lost 55 lbs, my wife about the same. Best of all we have kept it off.

Splenda works really in pumpkin pie.

Yes, but the crust is a toughy,, and an almond paste crust isn't gonna cut it.

Ya. And I ate the crust. Flour is more complex than sugar so if you are going to break over, the crust is better.

We blew our diet. Interesting... it is the sustained high carb diet that puts in the lbs. Haven’t weighed myself, though.

I’ve had two Thanksgiving dinners in the last 48 hours, and I bet I didn’t take in 500 calories, food-wise. My biggest bugaboo is the 2 AM zombie grazing I do. My step-son brought an entire pumpkin pie for dessert this afternoon and I haven’t touched it. But I bet I’ll wake up tomorrow morning, and a third of it will be gone, along with a quart of milk. And pie filling smeared in my whiskers. *chuckle*

I have used almond flour in snowball cookies but find it denser than regular flour. You might want to try a blend to keep the crust a little lighter. I think I did use about half regular and half almond but will try a quarter of almond next time. Of course, cookies aren’t quite the same as pie crust but maybe a little experimenting would be useful. Pie crust cookies would be an easy way to experiment without committing to a pie.

Here’s a recipe for lo-carb HOT BUTTERED RUM-——a popular Christmas libation sans calories.
The only cals are in the rum——figure one cal per each “proof” of rum. 100 proof rum is about 100 cals per shot.
Or use rum extract.

METHOD Mix tb rum, tea butter buds, bit sweetener. Add to cup of boiling water in pretty mug.

SERVE w/ 3-4 whole allspice floating on top.

Lo-carb Champagne Cocktail-—sip this all night for free.

Fill champagne flute with club soda-—add a bit of sweetner, drop of brandy, a whole fresh strawberry.

Replenish with club soda.

You could try adding gluten instead of whole flour. Gluten is the protein that makes bread chewy so it could give almond flour a more wheat like texture.

My Italian grandma used to make a stuffing made primarily from ground beef. It was like putting a giant meatball in the turkey.

Maybe there were some bread crumbs in there, but it was mostly meat.

Always worth the watching.

How do you think the pork rind “stuffing” would be if actually stuffed and cooked in the turkey...with some seasoning thrown in? That’s worth a try!

I did a low carb Thanksgiving - this is the stuffing I made:

It was delicious. Instead of 30 oz ground pork, I used a pound of elk and a pound of Gunnoe’s sausage.

For the bread, I made an almond flour bread - looked awful (I need to work on a more attractive loaf) and tasted delicious. Looks did’t matter when it was in the stuffing:
